Burgundy does bubbles — and they're worth discovering.

Domaine Bersan Crémant de Bourgogne NV comes from Kimmeridgian clay-limestone soils in Saint-Bris-le-Vineux, in the northern reaches of Burgundy. The grapes are farmed organically, hand harvested and gently pressed before the wine undergoes its second fermentation in bottle.

But what really caught our attention is the ageing: this Crémant spends 24–36 months on its lees before disgorgement. That's plenty of time for the wine to develop extra depth and finesse while keeping its freshness and mineral character.

Expect fine, persistent bubbles, delicate yellow stone-fruit flavours and a long, mineral finish. It's beautifully fresh but has enough depth to make it a proper food wine too.

Made from 90% Pinot Noir and 10% Gamay, it's delicate, lively and beautifully food-friendly. If you like Champagne-style fizz with a strong sense of place, but want to explore beyond Champagne, this is a great bottle to try.

Burgundy, organic farming, proper bottle ageing and a bottle full of bubbles. What's not to like?

  • WHAT TO EXPECT?

The blend is 90% Pinot Noir and 10% Gamay, giving the wine a lovely combination of fruit and freshness.

After the initial fermentation in vats, the second fermentation takes place in bottle and lasts around six months. The wine then spends 24–36 months on its lees before disgorgement. That extended lees ageing brings extra depth and finesse while retaining the wine's freshness.

The result is delicate and lively, with persistent bubbles, yellow stone fruit and a long mineral finish.

  • ABOUT THE PRODUCTION

Domaine Bersan has been organically farmed since 2009 and is certified AB by Ecocert. The grapes for this Crémant are harvested entirely by hand, transported in perforated crates and gently pressed to extract pure juice.

The wine follows the traditional sparkling-wine method, with its second fermentation taking place in the bottle. It is then aged on its lees for 24–36 months before riddling and disgorgement.

  • ABOUT THE PRODUCER

Domaine Bersan is a family domaine based in Saint-Bris-le-Vineux, with the Bersan family established in the village for generations.

Today, Jean-Louis and Jean-Christophe Bersan farm around 22 hectares across Saint-Bris, Irancy and Chablis, combining traditional methods with modern winemaking. The domaine's wines have been organically certified since 2012 according to the Chablis growers' association.

It's a great example of the diversity of Burgundy: rather than just Chardonnay and Pinot Noir in the places everyone knows, northern Burgundy has plenty of fascinating wines that reflect its distinctive Kimmeridgian soils and long winemaking history.
