Château Aspras Tomares Ballus Rosé 2022 is a classic Côtes de Provence rosé from Domaine des Aspras, a family estate in Correns that has been farming organically since the 1990s.
The wine takes its name from the Tomares Ballus butterfly, once native to the area but pushed into decline by agricultural chemicals. As organic farming spread through Correns, the butterfly returned — making it a wonderfully tangible symbol of what healthier vineyards can give back to the land. The wine itself is made from Grenache and Cinsault, with the younger vines of the estate producing a pale, fresh and delicately aromatic rosé. Expect raspberry and small red berries, subtle floral notes and a crisp, dry palate with plenty of freshness. We love it for its combination of Provençal elegance, genuine biodiversity story and sheer drinkability. Serve well chilled at 8–10°C, and because this is a magnum, it is made for long lunches, sunny tables and sharing with friends.

ABOUT THE PRODUCTION
Domaine des Aspras is a 32-hectare family estate, with 28 hectares within the Côtes de Provence appellation. The estate has been certified organic since 1997 and achieved HVE Level 3 certification in 2018, while also incorporating biodynamic practices. Vineyard work is focused on biodiversity and healthy soils, with manual harvesting and careful management of the surrounding ecosystem.
Tomares Ballus comes from the estate's younger vines, planted around 2000 on tuffeau soils. The grapes are harvested at night, destemmed and gently direct-pressed before low-temperature settling and fermentation. The wine is then aged in stainless-steel vats on fine lees, preserving its freshness and delicate fruit character.
ABOUT THE PRODUCER
Domaine des Aspras is a family estate in Correns, one of Provence's pioneering organic wine communities. The Latz family has been established at Les Aspras since 1961, and today the estate is run by the next generation.
Their approach is refreshingly holistic: organic farming, biodiversity and careful stewardship of the land sit at the centre of the estate rather than being an afterthought.
